How To Make Rustic Chicken & Apricot Pie

Ingredients
- 2 chicken breasts, cooked and shredded
- 1 cup dried apricots, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken broth
- 1/4 cup flour
- 1 package of refrigerated pie crusts
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, sauté the onion and garlic until they become translucent.

Add the shredded chicken, chopped apricots, dried thyme, salt, and black pepper to the skillet. Stir well to combine.

In a separate bowl, whisk together the chicken broth and flour until smooth. Pour this mixture into the skillet and stir until the filling thickens.

Place one pie crust in the bottom of a pie dish. Pour the chicken and apricot filling into the dish.

Cover the filling with the second pie crust, crimping the edges to seal. Cut a few slits on the top crust to allow steam to escape.

Bake in the preheated oven for 35-40 minutes, or until the crust turns golden brown.

Allow the pie to cool for a few minutes before serving. Enjoy!
