Serves:
Ingredients
- 2 cups of fresh raspberries
- 1/2 cup of sugar
- 2 tablespoons of cornstarch
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
- 1 refrigerated pie crust
- 1 egg (beaten, for egg wash)
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a large mixing bowl, combine the raspberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until well combined.
-
Roll out the pie crust and place it into a pie dish, trimming any excess dough.
-
Pour the raspberry mixture into the pie crust, spreading it out evenly.
-
Place the second pie crust on top of the raspberry filling and crimp the edges to seal the pie.
-
Cut a few slits on the top crust to vent steam during baking.
-
Brush the beaten egg over the top crust for a golden finish.
-
Place the pie in the preheated oven and bake for 35-45 minutes, or until the crust is golden brown and the filling is bubbling.
-
Remove the pie from the oven and let it cool for at least 1 hour before serving.
