Ingredients
- 1 pre-made pie crust
- 1 cup of shredded coconut
- 2/3 cup of sugar
- 1/4 cup of cornstarch
- 1/4 teaspoon of salt
- 2 and 1/2 cups of whole milk
- 4 egg yolks
- 2 tablespoons of unsalted butter
- 1 teaspoon of vanilla extract
- Whipped cream, for garnish
- Toasted coconut flakes, for garnish
Instructions

Preheat the oven to 350°F (175°C) and place the pre-made pie crust in a pie dish.

In a medium saucepan, combine the sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute, then remove from heat.

In a separate bowl, whisk the egg yolks. Slowly pour the hot milk mixture into the egg yolks, whisking constantly.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 2-3 minutes).

Remove from heat and stir in the butter, shredded coconut, and vanilla extract until well combined.

Pour the coconut filling into the pie crust and smooth the top with a spoon.

Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the filling is set.

Allow the pie to cool completely before refrigerating for at least 2 hours or until chilled.
