How To Make Little Eccles Mince Pies

Ingredients
- 1 cup of all-purpose flour
- 1/4 cup of cold unsalted butter, cubed
- 1/4 cup of cold water
- 1/2 cup of mincemeat
- Powdered sugar, for dusting
Instructions

In a mixing bowl, combine the flour and butter. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs.

Gradually add the cold water a little at a time, mixing until the dough comes together.

Shape the dough into a ball, wrap it in plastic wrap, and refrigerate it for 30 minutes.

Preheat the oven to 375°F (190°C).

On a lightly floured surface, roll out the dough to a thickness of about 1/8 inch.

Using a round cookie cutter or a drinking glass, cut out circles from the dough and press them into a greased muffin tin, forming the pie crusts.

Fill each pie crust with about a tablespoon of mincemeat.

Roll out the remaining dough and cut out smaller circles to use as the pie lids. Place the lids on top of the mincemeat and press the edges to seal.

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown.

Allow the mince pies to cool slightly before removing them from the tin.
