How To Make Individual Christmas Pies

What better way to get you in a happy mood than having a slice of pie? These baked dishes are perfect for those who can’t get enough of flaky pastries. From an apple variant to a lemon meringue, these pies pastries recipes will satisfy your pie and pastry cravings.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup ice-cold water
  • 1 cup mixed berries (such as cranberries, blueberries, and raspberries)
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 egg, beaten (for egg wash)
  • 2 tbsp turbinado sugar (for sprinkling)

Instructions

  1. In a food processor, combine flour, cold butter, sugar, and salt. Pulse until mixture resembles coarse crumbs.

  2. With the processor running, slowly add ice-cold water until the dough forms a ball.

  3. Divide the dough into four equal portions and flatten into discs. Wrap in plastic wrap and refrigerate for 30 minutes.

  4. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  5. In a bowl, combine mixed berries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until well combined.

  6. On a lightly floured surface, roll out each dough disc into a circle large enough to fit your individual pie dishes.

  7. Place each rolled-out dough circle into the pie dishes and trim any excess dough.

  8. Fill each dish with the berry mixture.

  9. Fold the edges of the dough over the filling, creating a rustic crust.

  10. Brush the edges of the dough with beaten egg and sprinkle with turbinado sugar.

  11. Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.

  12. Allow the pies to cool for a few minutes before serving.
