How To Make Goat’s Cheese & Onion Pastries

Ingredients
- 1 sheet of puff pastry, thawed
- 1 large onion, thinly sliced
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 100g goat’s cheese, crumbled
- Fresh thyme leaves, for garnish
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

In a frying pan, heat the olive oil over medium heat. Add the thinly sliced onion and cook until caramelized, about 10 minutes. Stir in the balsamic vinegar and cook for another 2 minutes. Season with salt and pepper.

Roll out the puff pastry sheet and cut it into 4 equal squares.

Spoon the caramelized onions onto each square, leaving a border around the edges. Top with crumbled goat’s cheese.

Fold the edges of the pastry over the filling, creating a rustic shape.

Place the pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown and puffed up.

Remove from the oven and let cool for a few minutes. Garnish with fresh thyme leaves before serving.
