- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 250ml beef or game stock
- 1 sprig of fresh thyme
- Salt and pepper, to taste
- 800g potatoes, peeled and cubed
- 50g butter
- 100ml milk
- 50g grated cheese (optional)
Instructions
-
Preheat the oven to 180°C (350°F).
-
In a large pan, heat the olive oil over medium heat. Add the onions, carrots, celery, and garlic. Cook until softened, about 5 minutes.
-
Add the game meat to the pan and brown on all sides.
-
Stir in the tomato paste and cook for another 2 minutes.
-
Pour in the stock and add the thyme. Season with salt and pepper. Bring to a simmer and cook for 30 minutes, until the meat is tender and the sauce has thickened.
-
Meanwhile, cook the potatoes in a large pot of salted boiling water until tender. Drain and return to the pot.
-
Add the butter and milk to the pot with the potatoes. Mash until smooth and creamy. Season with salt and pepper.
-
Transfer the meat mixture to a baking dish. Spread the mashed potatoes evenly on top. If desired, sprinkle grated cheese over the potatoes.
-
Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden and the pie is bubbling.
-
Serve hot and enjoy!
