Ingredients
- 1 cup cooked flageolet beans
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup chopped spinach
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 3 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
- 1 pre-made pie crust
Instructions

Preheat the oven to 375°F (190°C).

In a skillet, sauté the onion and garlic until softened.

Add the spinach and cook until wilted. Remove from heat and let it cool.

In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg.

Add the flageolet beans, cooked onion, garlic, and spinach to the egg mixture.
