Ingredients
- 1 package of refrigerated pie crusts
- 2 tbsp butter
- 1 onion, diced
- 2 cloves of garlic, minced
- 8 oz mushrooms, sliced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded Gruyere cheese
- 1/2 cup heavy cream
- 2 eggs, beaten
Instructions

Preheat the oven to 375°F (190°C).

Place one pie crust in a 9-inch pie dish and set aside.

In a large skillet, melt the butter over medium heat. Add the diced onion and minced garlic and sauté until they are soft and fragrant, about 5 minutes.

Add the sliced mushrooms to the skillet and cook until they are tender and any liquid has evaporated, about 8 minutes. Stir in the dried thyme, salt, and black pepper.

Remove the skillet from the heat and let the mushroom mixture cool slightly.

Spread the mushroom mixture evenly over the pie crust in the pie dish. Sprinkle the shredded Gruyere cheese over the top.

In a small bowl, whisk together the heavy cream and beaten eggs. Pour this mixture over the mushrooms and cheese in the pie dish.

Place the second pie crust on top of the pie filling and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.

Bake the pie in the preheated oven for 30-40 minutes, or until the crust is golden brown and the filling is set.

Remove the pie from the oven and let it cool for a few minutes before serving.
