How To Make Dad’s Beef, Mushroom & Mustard Pies

Ingredients
- 500g beef stew meat, cut into small pieces
- 1 onion, finely chopped
- 200g mushrooms, sliced
- 2 cloves of garlic, minced
- 2 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 sheets of store-bought puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 180°C (350°F).

In a large pan, heat some oil over medium heat and brown the beef on all sides. Remove and set aside.

In the same pan, add the chopped onion and cook until softened. Add the sliced mushrooms and garlic, and cook until the mushrooms are golden brown.

Return the beef to the pan and add the Dijon mustard, Worcestershire sauce, beef broth, dried thyme, salt, and pepper. Stir well to combine.

Bring the mixture to a simmer, then cover with a lid and transfer to the preheated oven. Cook for 2 hours, or until the beef is tender and the flavors have melded together.

Remove the pan from the oven and let it cool slightly.

Roll out the puff pastry sheets and cut out circles large enough to fit into individual pie dishes.

Divide the beef and mushroom filling among the pie dishes. Top with another circle of puff pastry and press the edges to seal.

Brush the tops of the pies with the beaten egg to give them a golden finish.

Place the pies on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the pastry is golden and puffed.

Serve the pies hot, garnished with fresh herbs if desired.
