How To Make Chicken, leek & parsley pie

Ingredients
- 2 chicken breasts, cooked and shredded
- 1 leek, thinly sliced
- 1 tablespoon olive oil
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 1 cup milk
- 2 tablespoons all-purpose flour
- 1 cup frozen peas
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- 1 sheet of puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C).

In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and minced garlic, and cook until softened.

In a separate bowl, whisk together the chicken broth, milk, and flour. Add this mixture to the skillet and stir until it thickens into a creamy sauce.

Stir in the shredded chicken, frozen peas, and chopped parsley. Season with salt and pepper to taste.

Transfer the mixture to a greased baking dish.

Place the puff pastry sheet on top of the dish, covering the filling completely. Cut a few slits in the pastry to allow steam to escape.

Brush the pastry with beaten egg for a golden finish.

Bake for 35-40 minutes or until the pastry is puffed and golden brown.

Allow the pie to cool for a few minutes before serving.
