How To Make Beef Shin Pie

Ingredients
- 500g beef shin, cut into cubes
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- 1 sheet of puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 160°C (320°F).

Heat the olive oil in a large ovenproof pot over medium heat. Add the beef shin and brown on all sides. Remove from the pot and set aside.

In the same pot, sauté the onion and garlic until softened.

Add the carrots and celery and cook for another 2-3 minutes.

Return the beef shin to the pot and pour in the beef broth. Stir in the tomato paste, thyme, rosemary, bay leaf, and season with salt and pepper.

Cover the pot and transfer to the preheated oven. Cook for 2.5-3 hours, or until the beef is tender and the flavors have melded together.

Remove the bay leaf from the pot and transfer the beef mixture to a pie dish. Allow it to cool slightly.

Increase the oven temperature to 180°C (350°F).

Roll out the puff pastry sheet and place it over the beef mixture, sealing the edges. Brush the pastry with beaten egg.

Bake in the oven for 20-25 minutes, or until the pastry is golden and crispy.

Remove from the oven and let it rest for a few minutes before serving.
