Ingredients
- 2 cups of fresh apricots, pitted and halved
- 1/2 cup of sugar
- 2 tablespoons of cornstarch
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of vanilla extract
- 1 tablespoon of lemon juice
- 1 prepared pie crust
- 1 tablespoon of butter, diced
Instructions

Preheat the oven to 350 degrees Fahrenheit.

In a large bowl, combine the apricots, sugar, cornstarch, cinnamon, vanilla extract, and lemon juice. Mix well.

Roll out the pie crust and place it in a pie dish. Trim the edges and crimp them.
