- 1 ¾ cups all-purpose flour
- 1 ½ cups canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- for the streusel topping:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the pumpkin puree, sugar, oil, eggs, and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.

In a small bowl, combine all the streusel topping ingredients. Use your fingers or a fork to blend the mixture until it resembles coarse crumbs.

Fill the muffin cups 3/4 full with the pumpkin batter. Sprinkle the streusel topping evenly over the batter.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
