- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup grated carrot
- 1/2 cup grated apple
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1/4 cup vegetable oil
- 1/2 cup plain Greek yogurt
- 1/4 cup honey
- 1 tsp vanilla extract
Instructions

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.

In a separate bowl, mix together the grated carrot, grated apple, raisins, chopped walnuts, vegetable oil, Greek yogurt, honey, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
