Ingredients
- 500g fresh strawberries, hulled and halved
- 250g granulated sugar
- 60ml Pimm’s No. 1
- Juice of 1 lemon
- 1 tsp lemon zest
Instructions

In a large saucepan, combine the strawberries, sugar, Pimm’s, lemon juice, and lemon zest.

Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar has dissolved.

Reduce the heat to low and continue to simmer for about 20-25 minutes, until the jam has thickened and reaches the desired consistency.

Remove from heat and let cool for 5 minutes.

Transfer the jam into sterilized jars and seal tightly.

Allow the jam to cool completely before storing in the fridge.
