Ingredients
- 1 pineapple, peeled and cored
- 1 cup coconut milk
- 1/2 cup sugar
- 1/2 cup water
- 1 tsp vanilla extract
- 1/2 cup shredded coconut
Instructions

In a saucepan, combine the coconut milk, sugar, water, and vanilla extract.

Bring the mixture to a simmer over medium heat, stirring occasionally, until the sugar has dissolved.

Add the pineapple chunks to the simmering liquid and cook for about 10 minutes, or until the pineapple is tender.

Remove the pineapple from the liquid and set aside. Allow the liquid to cool completely.

Once the liquid has cooled, pour it into a blender along with the shredded coconut. Blend until smooth.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Once the mixture reaches a soft-serve consistency, transfer it to a container and freeze for at least 4 hours, or until firm.

Serve the pineapple and coconut ice with the poached pineapple chunks on top.
