Ingredients
- 4 ripe pears
- 1 cup water
- 1/2 cup granulated sugar
- 1 vanilla bean, split lengthwise
- 1 cup rolled oats
- 2 cups almond milk
- 4 tbsp almond butter
- 2 tbsp maple syrup
- 1/4 cup sliced almonds, toasted
Instructions

In a large saucepan, combine water, sugar, and vanilla bean. Bring to a simmer over medium heat.

Peel the pears, leaving the stems intact. Place the pears in the simmering syrup and cook for 15-20 minutes, or until tender.

While the pears are poaching, in a separate saucepan, combine oats and almond milk. Cook over medium heat, stirring frequently, until thickened and creamy, about 10 minutes.

Remove the pears from the syrup and set aside. Remove the vanilla bean from the syrup and discard.

To serve, divide the almond butter porridge among 4 bowls. Place a poached pear on top of each bowl.

Drizzle each pear with maple syrup and sprinkle with toasted sliced almonds.
