Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 tbsp melted butter
- 1 tbsp sugar
- 1 tsp vanilla extract
- 1 cup ricotta cheese
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup thyme honey
Instructions

In a mixing bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, mix the milk, melted butter, sugar, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients and whisk until smooth.

Heat a non-stick pan over medium-low heat and lightly grease with butter.

Pour 1/4 cup of the batter onto the pan to form a crumpet.

Cook until bubbles start to form on the surface, then flip and cook for another 2-3 minutes.

Repeat with the remaining batter.

Top each crumpet with a dollop of ricotta cheese and a handful of mixed berries.

Drizzle with thyme honey before serving.
