How To Make Homemade Crumpets with Ricotta, Berries & Thyme Honey

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 tbsp melted butter
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1 cup ricotta cheese
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup thyme honey

Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, and salt.

  2. In a separate bowl, mix the milk, melted butter, sugar, and vanilla extract.

  3. Gradually add the wet ingredients to the dry ingredients and whisk until smooth.

  4. Heat a non-stick pan over medium-low heat and lightly grease with butter.

  5. Pour 1/4 cup of the batter onto the pan to form a crumpet.

  6. Cook until bubbles start to form on the surface, then flip and cook for another 2-3 minutes.

  7. Repeat with the remaining batter.

  8. Top each crumpet with a dollop of ricotta cheese and a handful of mixed berries.

  9. Drizzle with thyme honey before serving.
