How To Make Gooseberry & Elderflower Fool

Ingredients

  • 250g gooseberries
  • 50g sugar
  • 2 tbsp elderflower cordial
  • 300ml heavy cream
  • 1 tsp vanilla extract

Instructions

  1. In a saucepan, combine the gooseberries, sugar, and elderflower cordial. Cook over medium heat until the gooseberries are soft and mushy, about 10 minutes. Allow to cool completely.

  2. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.

  3. Gently fold the cooled gooseberry mixture into the whipped cream until well combined.

  4. Spoon the fool into serving glasses or bowls and refrigerate for at least 2 hours to set.

  5. Serve chilled and garnish with fresh gooseberries if desired.
