- 3 egg whites
- 1/2 cup granulated sugar
- 1/2 cup shredded coconut
- Zest of 1 lime
- 1 cup fresh raspberries
Instructions

Preheat the oven to 300°F (150°C) and line a baking dish with parchment paper.

Using an electric mixer, beat the egg whites until stiff peaks form.

Gradually add in the sugar, continuing to beat until the mixture is glossy.

Gently fold in the shredded coconut and lime zest.

Spread the mixture evenly onto the prepared baking dish.

Bake for 45 minutes or until the meringue is crisp and lightly golden.

Allow the meringue to cool completely, then top it with fresh raspberries.
