How To Make Thumbprint Cookies

Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs, separated
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 cup jam or preserves (any flavor)
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

Separate the eggs, placing the whites in a small bowl and setting the yolks aside.

Add the egg yolks and vanilla extract to the butter mixture, and mix until well combined.

In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Roll the dough into 1-inch balls, and place them onto the prepared baking sheet. Make a small indentation in the center of each cookie using your thumb or the back of a spoon.

Fill each indentation with about 1/2 teaspoon of jam or preserves.

In the small bowl with the egg whites, lightly beat them with a fork. Brush the edges of each cookie with the beaten egg whites.

Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
