How To Make Spiced Lemon & Ginger Biscuits

Ingredients
- 1 ¾ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp ground ginger
- ¼ tsp ground cinnamon
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- Zest of 1 lemon
- Juice of ½ lemon
Instructions

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt.

In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.

Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.

Flatten each ball slightly with the bottom of a glass or your fingers.

Bake for 10-12 minutes, or until the edges of the biscuits are lightly golden.

Remove from the oven and let the biscuits cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
