Serves:
Ingredients
- 1 cup all-purpose flour
- 1/2 cup ground almonds
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 egg yolk
- 1/2 cup raspberry jam
- Powdered sugar, for dusting
Instructions
-
Preheat the oven to 350°F (180°C).
-
In a mixing bowl, combine flour, ground almonds, and granulated sugar. Add cold butter and use your fingers to rub it into the dry ingredients until it resembles coarse crumbs.
-
Add the egg yolk and mix until the dough comes together. If needed, add a little bit of cold water.
-
Roll out the dough on a lightly floured surface to a 1/4-inch thickness. Use a round cookie cutter to cut out circles of dough and transfer them to a baking sheet lined with parchment paper.
-
Spoon a teaspoon of raspberry jam onto each dough circle, leaving a small border around the edges.
-
Take another piece of dough and cut out a small shape from the center, like a heart or a star. Place this dough shape on top of the raspberry jam.
-
Bake for 15-18 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely.
-
Dust with powdered sugar before serving.
