Preparation: 20 minutes
Cooking: 25 minutes
Total: 45 minutes

Serves:

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup ground almonds
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 1/2 cup raspberry jam
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a mixing bowl, combine flour, ground almonds, and granulated sugar. Add cold butter and use your fingers to rub it into the dry ingredients until it resembles coarse crumbs.

  3. Add the egg yolk and mix until the dough comes together. If needed, add a little bit of cold water.

  4. Roll out the dough on a lightly floured surface to a 1/4-inch thickness. Use a round cookie cutter to cut out circles of dough and transfer them to a baking sheet lined with parchment paper.

  5. Spoon a teaspoon of raspberry jam onto each dough circle, leaving a small border around the edges.

  6. Take another piece of dough and cut out a small shape from the center, like a heart or a star. Place this dough shape on top of the raspberry jam.

  7. Bake for 15-18 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely.

  8. Dust with powdered sugar before serving.
