Ingredients
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 1/4 cup erythritol
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup coconut oil
- 1 egg
- 1 tsp vanilla extract
- 1/4 tsp peppermint extract
- 1/4 cup sugar-free chocolate chips
Instructions

Preheat the oven to 350°F.

In a bowl, combine the coconut flour, almond flour, erythritol, cocoa powder, baking powder, and salt.

In a separate bowl, beat the coconut oil until creamy. Add the egg, vanilla extract, and peppermint extract, and beat again.

Add the dry ingredients to the wet ingredients and mix until well combined.

Fold in the sugar-free chocolate chips.

Roll the dough into 12 balls and place them on a baking sheet lined with parchment paper.

Flatten the balls slightly with your fingers or a spoon.

Bake for 12-15 minutes or until the edges are lightly browned.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
