Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 egg
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar, for dusting
Instructions

Preheat the oven to 350°F (175°C).

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the egg, lemon juice, and lemon zest, and mix until well combined.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until the dough comes together.

Roll the dough into small balls and place them onto a lined baking sheet. Flatten each ball slightly with the palm of your hand.

Bake the cookies for 10 minutes, or until the edges start to turn golden brown.
