How To Make Coconut Short Cookies
This cookies recipe yields rich and chewy short cookies loaded with walnuts and coconuts. It’s a deliciously light treat made in under 30 minutes!

Ingredients
- 1cupvegetable oil
- 1cupbutter,softened
- 1cupwhite sugar
- 1cupbrown sugar,packed
- 1egg
- 2tspvanilla extract
- 3½cupsall purpose flour
- 1tspbaking soda
- 1tspsalt
- 1cupcornflakes cereal
- 1cuprolled oats
- 1cupwalnuts,chopped
- 1cupunsweetened flaked coconut
Instructions

Preheat the oven to 375 degrees F.

Beat the butter and sugars until fluffy. Slowly add the oil and beat until the oil is well incorporated. Add the egg and vanilla, then beat to mix.

In a small bowl, combine the flour, soda and salt. Add to the butter mixture and stir just until mixed.

Combine the corn flakes, oatmeal, nuts and coconut and add to cookie mixture, then mix just until combined.

Use a cookie scoop to produce consistently sized cookies. Alternatively, drop rounded teaspoonfuls onto an ungreased cookie sheet if there is no scoop.

Bake for 12 minutes or until lightly browned.
