How To Make Chickpea Flour Chocolate Chunk Cookies
Enjoy some gluten-free treats with these chocolate chunk cookies baked with chickpea flour and peanut butter. Add walnuts for some crunch!

- 1cupbrown sugar,packed
- ¾cupbutter,softened
- ⅓cuppeanut butter
- 1egg
- 1tspvanilla extract,or more to taste
- 2cupschickpea flour
- 2tbspcornstarch
- 1tspbaking powder
- ½tspsalt
- 1cupchocolate,chopped
- ½cupoats
- ¼cupwalnuts,chopped
Instructions

Preheat oven to 350 degrees F. Grease a baking sheet.

Beat brown sugar, butter, peanut butter, egg, and vanilla extract together in a bowl.

Whisk chickpea flour, cornstarch, baking powder, and salt together in a bowl. Stir flour mixture into peanut butter mixture.

Stir chocolate, oats, and walnuts into peanut butter mixture until dough is evenly combined.

Cover the bowl with plastic wrap and refrigerate the dough for about 15 minutes until chilled.

Form dough into tablespoon-sized balls and place 2-inches apart on the prepared baking sheet.

Bake in the preheated oven for about 12 minutes until brown. Let cool on baking sheet for 3 to 5 minutes, then transfer to a wire rack to cool completely.
