  • 1 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup melted butter
  • 1/2 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, combine the shredded coconut, granulated sugar, flour, baking powder, and salt. Mix well.

  3. Add the melted butter, vanilla extract, and egg to the dry ingredients. Mix until well combined.

  4. Drop tablespoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

  5. Bake for 10-12 minutes, or until the edges turn golden brown.

  6. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
