How To Make Cherry & Coconut Florentines

Ingredients
- 1 cup dried cherries
- 1 cup shredded coconut
- 1/2 cup sliced almonds
- 1/4 cup unsalted butter
- 1/4 cup honey
- 1/4 cup all-purpose flour
- 1/4 teaspoon vanilla extract
Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, combine the dried cherries, shredded coconut, and sliced almonds.

In a small saucepan, melt the butter and honey over low heat, stirring until smooth.

Remove the saucepan from heat and stir in the flour and vanilla extract until well combined.

Pour the butter mixture over the cherry mixture and stir until all ingredients are evenly coated.

Spoon rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.

Flatten each spoonful slightly with the back of a spoon.

Bake for 12-15 minutes or until the edges are golden brown.

Allow the Florentines to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
