How To Make Cinco de Chili Chocolate Cupcakes with Chili Cream Cheese Frosting

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/4 tsp cinnamon
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup hot water
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 tsp chili powder
  • 1/4 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, chili powder, and cinnamon.

  3. In a separate large bowl, mix together the granulated sugar, brown sugar, vegetable oil, and eggs until well combined.

  4. Add the buttermilk, hot water, and vanilla extract to the sugar mixture, and mix until smooth.

  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  6. Fill each cupcake liner about 2/3 full with batter.

  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

  8. Remove the cupcakes from the oven and let them cool completely on a wire rack.

  9. In a mixing bowl, beat together the softened cream cheese and butter until smooth.

  10. Gradually add the powdered sugar, chili powder, cinnamon, and salt to the cream cheese mixture, and beat until fluffy.

  11. Frost the cooled cupcakes with the chili cream cheese frosting.

  12. Serve and enjoy!
