- 14Medjool dates, pitted, soaked in warm water for 10 minutes
- 2tsppure vanilla extract
- ¼cupunsweetened cocoa powder
- ½cupsalted peanuts,dry roasted
- ½cupsunflower seeds
For Optional Coating:

Soak the dates in warm water for 15 minutes, then drain them. Or chop them up into tiny pieces.
-
Put the dates, vanilla extract, cocoa powder, peanuts, and sunflower seeds into the blender or food processor, and blend for 4 to 5 minutes or until a thick oily “dough” ball is formed. The dough will be oily from the seeds and nuts.
-
Scrape down the sides of the blender or food processor a few times to get all of the dry ingredients to the bottom.
-
Once a dough is formed, scoop the dough, about 1 tablespoon each, and roll it into a smooth ball by hand.
-
If rolling into the desired coatings, spread the ingredients onto a plate and roll the moist dough ball around to fully cover.
-
Serve and enjoy!
