How To Make Tia Maria Cheesecake

Ingredients
- 200g digestive biscuits
- 100g unsalted butter, melted
- 500g cream cheese
- 200g caster sugar
- 3 eggs
- 2 tbsp Tia Maria liqueur
- 1 tbsp plain flour
- 200ml double cream
- 1 tsp vanilla extract
Instructions

Preheat the oven to 180°C (350°F).

Crush the digestive biscuits until they resemble fine crumbs. Stir in the melted butter. Press the mixture into the base of a 20cm (8-inch) springform cake tin. Chill in the refrigerator for 15 minutes.

Meanwhile, in a large mixing bowl, beat together the cream cheese and caster sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the Tia Maria liqueur, plain flour, double cream, and vanilla extract until well combined.

Pour the cream cheese mixture over the chilled biscuit base in the cake tin. Smooth the top with a spatula.

Bake in the preheated oven for 40-45 minutes or until the cheesecake is set around the edges but still slightly wobbly in the center.

Remove from the oven and allow to cool in the tin. Once cooled, transfer to the refrigerator and chill for at least 3 hours or overnight before serving.

To serve, remove the cheesecake from the tin and slice into individual portions. Enjoy!
