How To Make Baked Cherry Cheesecake

Ingredients
- 1 cup graham cracker crumbs
- 2 tbsp butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 cup fresh or frozen cherries, pitted
- 2 tbsp sugar
- 1 tbsp cornstarch
- 1/4 cup water
Instructions

Preheat the oven to 325°F (163°C).

In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.

Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.

In a saucepan, combine the cherries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and the cherries soften.

Spoon the cherry mixture over the cream cheese layer in the springform pan.

Bake in the preheated oven for 45 minutes, or until the cheesecake is set. Remove from the oven and let it cool completely.

Once cooled, refrigerate for at least 4 hours or overnight before serving.

To serve, remove the sides of the springform pan and slice into individual portions.
