- 2 cups shredded coconut
- 1 cup powdered sugar
- 1/4 cup cornstarch
- 1/4 cup water
- 1/4 cup light corn syrup
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- food coloring (optional)
Instructions

In a large bowl, combine the shredded coconut, powdered sugar, and cornstarch. Mix well and set aside.

In a saucepan, combine the water, corn syrup, granulated sugar, and salt. Cook over medium heat until the sugar has dissolved, stirring occasionally.

Increase the heat to medium-high and continue cooking until the mixture reaches 240°F on a candy thermometer.

Remove the saucepan from heat and stir in the vanilla extract.

Pour the hot mixture over the coconut mixture and stir until well combined. If desired, add a few drops of food coloring and mix until evenly colored.

Press the mixture into a greased 9×9-inch baking dish and smooth the top with a spatula.

Allow the marshmallows to set at room temperature for at least 2 hours, or refrigerate for faster setting.
