Ingredients
- 1 cup blackberries
- 1 tbsp lemon juice
- 1/4 cup water
- 3 tbsp gelatin
- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 1/4 cup cornstarch
Instructions

In a saucepan, combine the blackberries, lemon juice, and water. Simmer over medium heat for 5 minutes, or until the blackberries are soft.

Remove from heat and puree the mixture using a blender or immersion blender. Strain the puree through a fine-mesh sieve to remove seeds.

Sprinkle the gelatin over 1/4 cup of cold water and let it bloom for 5 minutes.

In a separate saucepan, combine the granulated sugar and 1/4 cup water. Heat over medium heat until the sugar has dissolved and the mixture reaches 240°F (115°C) on a candy thermometer.

Add the bloomed gelatin to the sugar mixture and stir until fully dissolved.

Pour the blackberry puree into the gelatin mixture and whisk until well combined.

Spray a 9×9 inch baking dish with non-stick spray and dust with a mixture of powdered sugar and cornstarch.

Pour the marshmallow mixture into the prepared dish and smooth the top with a spatula.

Let the marshmallows set at room temperature for at least 4 hours, or overnight.

Once set, cut the marshmallows into squares or use cookie cutters to make fun shapes.

Toss the marshmallows in a mixture of powdered sugar and cornstarch to prevent sticking.
