Ingredients

  • 1 cup blackberries
  • 1 tbsp lemon juice
  • 1/4 cup water
  • 3 tbsp gelatin
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/4 cup cornstarch

Instructions

  1. In a saucepan, combine the blackberries, lemon juice, and water. Simmer over medium heat for 5 minutes, or until the blackberries are soft.

  2. Remove from heat and puree the mixture using a blender or immersion blender. Strain the puree through a fine-mesh sieve to remove seeds.

  3. Sprinkle the gelatin over 1/4 cup of cold water and let it bloom for 5 minutes.

  4. In a separate saucepan, combine the granulated sugar and 1/4 cup water. Heat over medium heat until the sugar has dissolved and the mixture reaches 240°F (115°C) on a candy thermometer.

  5. Add the bloomed gelatin to the sugar mixture and stir until fully dissolved.

  6. Pour the blackberry puree into the gelatin mixture and whisk until well combined.

  7. Spray a 9×9 inch baking dish with non-stick spray and dust with a mixture of powdered sugar and cornstarch.

  8. Pour the marshmallow mixture into the prepared dish and smooth the top with a spatula.

  9. Let the marshmallows set at room temperature for at least 4 hours, or overnight.

  10. Once set, cut the marshmallows into squares or use cookie cutters to make fun shapes.

  11. Toss the marshmallows in a mixture of powdered sugar and cornstarch to prevent sticking.

  12. Serve and enjoy!
