Ingredients
- 200g unsalted butter, softened
- 200g caster sugar
- 4 large eggs
- 200g self-raising flour
- 1 tsp baking powder
- 2 tbsp milk
- 4 tbsp strawberry jam
- 200ml double cream
- Icing sugar, for dusting
Instructions

Preheat the oven to 180°C/350°F. Grease and line two 20cm round cake tins.

In a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, mixing well after each addition.

Sift in the flour and baking powder, then fold into the mixture using a spatula.

Stir in the milk to loosen the batter slightly.

Divide the batter equally between the prepared cake tins and smooth the tops.

Bake in the preheated oven for 20-25 minutes, or until golden and a skewer inserted into the center comes out clean.

Remove from the oven and cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.

Once the cakes are completely cooled, spread one cake with strawberry jam and the other with whipped double cream.

Sandwich the cakes together and dust the top with icing sugar.
