Ingredients
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup milk
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions

Preheat the oven to 350°F (175°C).

In a large mixing bowl, whisk together the eggs, sugar, vegetable oil, milk, lemon juice, lemon zest, and vanilla extract.

In a separate bowl, combine the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the batter into a greased 8-inch round cake pan.

Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
