  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 cup unsalted butter, softened
  • 2 ½ cups powdered sugar
  • 2 tbsp milk
  • Yellow and brown food coloring
  • Fondant decorations (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a Pudsey Bear-shaped cake pan.

  2. In a medium bowl, combine flour, baking powder, and salt. Set aside.

  3. In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

  4. Gradually add flour mixture to the butter mixture, alternating with milk. Begin and end with the flour mixture, mixing well after each addition.

  5. Pour batter into the prepared cake pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  6. Allow the cake to cool in the pan for 10 minutes, then remove from the pan and transfer to a wire rack to cool completely.

  7. In a separate bowl, beat the softened butter until creamy. Gradually add powdered sugar and milk, mixing well until smooth and fluffy.

  8. Divide the frosting into two separate bowls. Add yellow food coloring to one bowl and brown food coloring to the other. Mix until the desired colors are achieved.

  9. Once the cake is completely cooled, use a knife to trim any uneven edges. Frost the entire cake with the yellow frosting.

  10. Use the brown frosting to pipe the signature Pudsey Bear eye patch and nose on the cake. Add any additional fondant decorations if desired.

  11. Slice and serve the adorable Pudsey Bear Cake to your delighted guests.
