Ingredients
- 2 cups all-purpose flour
- 1/2 cup poppyseeds
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup honey
- 2 eggs
- 1 cup buttermilk
- 1 tsp vanilla extract
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, poppyseeds, baking powder, baking soda, and salt.

In a separate large bowl, cream together the butter, sugar, and honey until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients mixture to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Serve the poppyseed & honey cake as is or with a dusting of powdered sugar on top.
