Ingredients
- 1 cup pistachios, finely ground
- 1 cup grated courgette
- 1 lemon, zest and juice
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions

Preheat the oven to 180°C (350°F). Grease and flour a cake tin.

In a large bowl, mix the pistachios, grated courgette, lemon zest, lemon juice, melted butter, sugar, and eggs until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Pour the batter into the prepared cake tin and smooth the top.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Serve the pistachio, courgette & lemon cake with a dusting of powdered sugar, if desired.
