- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
- Powdered sugar for dusting (optional)
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.
-
Zest one of the oranges and set aside. Then, juice both oranges and set aside the fresh orange juice.
-
In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
-
Beat in the eggs, one at a time, until well incorporated.
-
In a separate bowl, whisk together the flour, baking powder, salt, and orange zest.
-
Gradually add the dry ingredients to the butter mixture, alternating with the orange juice and orange zest, beginning and ending with the dry ingredients.
-
Stir in the vanilla extract.
-
Pour the batter into the prepared cake pan and smooth the top with a spatula.
-
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake onto a wire rack to cool completely.
-
Once cooled, dust with powdered sugar if desired. Slice and serve.
