Ingredients
- 2 oranges
- 150g ground almonds
- 150g caster sugar
- 3 eggs
- 1 tsp baking powder
- 100g mascarpone cheese
- zest of 1 lemon
- 1 tsp vanilla extract
- 1 tbsp powdered sugar (for dusting)
Instructions

Preheat the oven to 180°C (350°F) and grease a round cake pan.

Boil the oranges in a saucepan for 1 hour until soft.

Once cooled, blend the boiled oranges in a food processor until smooth.

In a mixing bowl, beat the eggs and sugar together until light and fluffy.

Add the orange puree, ground almonds, baking powder, lemon zest, and vanilla extract to the bowl and mix well.

Pour the batter into the prepared cake pan and bake for 40 minutes or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the citrus mascarpone frosting by whipping the mascarpone cheese until smooth and creamy.

Once the cake has cooled, spread the citrus mascarpone frosting over the top of the cake.

Dust with powdered sugar for decoration.
