Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 2 cups rhubarb, chopped
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 1/4 cup old-fashioned oats
Instructions

Preheat oven to 350°F (175°C). Grease a 9-inch square baking dish.

In a mixing bowl, combine flour, granulated sugar, baking powder, and salt. Cut in the butter using a pastry cutter or your fingers until crumbly.

Press half of the crumb mixture into the bottom of the prepared dish.

In a separate bowl, mix together rhubarb, brown sugar, and cinnamon. Spread evenly over the crust.

Sprinkle the remaining crumb mixture and oats over the rhubarb.

Bake for 45 minutes, or until the top is golden brown and the rhubarb is tender.

Allow to cool before serving.
