Serves:
Ingredients
- 1 box lemon cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 eggs
- 1 cup lemon juice
- 1/2 cup powdered sugar
- Lemon zest (for garnish)
Instructions
-
Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
-
In a large mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix until well combined.
-
Pour the batter into the prepared baking dish. Smooth the top with a spatula.
-
Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.
-
In a small saucepan, heat the lemon juice and powdered sugar over medium heat until the sugar is dissolved. Remove from heat.
-
Using a fork, poke several holes all over the warm cake. Pour the lemon juice mixture over the cake, allowing it to seep into the holes.
-
Let the cake cool completely, then refrigerate for at least 1 hour to allow the flavors to meld.
-
Sprinkle the cake with lemon zest before serving.
-
Slice the cake into squares and serve chilled.
