  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 cup lemon juice
  • 1/2 cup powdered sugar
  • Lemon zest (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  2. In a large mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix until well combined.

  3. Pour the batter into the prepared baking dish. Smooth the top with a spatula.

  4. Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.

  5. In a small saucepan, heat the lemon juice and powdered sugar over medium heat until the sugar is dissolved. Remove from heat.

  6. Using a fork, poke several holes all over the warm cake. Pour the lemon juice mixture over the cake, allowing it to seep into the holes.

  7. Let the cake cool completely, then refrigerate for at least 1 hour to allow the flavors to meld.

  8. Sprinkle the cake with lemon zest before serving.

  9. Slice the cake into squares and serve chilled.
