Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter, melted
- 1/2 cup lemon juice
- 2 tbsp lemon zest
- 1/2 cup milk
- 2 egg yolks
- 2 egg whites
- 1/4 cup sugar for meringue
Instructions

Preheat the oven to 350°F and grease a 9-inch round cake pan.

In a large bowl, mix together flour, sugar, baking powder, and salt.

In a separate bowl, whisk together melted butter, lemon juice, lemon zest, milk, and egg yolks.

Gradually add the wet ingredients to the dry ingredients and stir until well combined.

In a clean bowl, beat egg whites until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.

Gently fold the beaten egg whites into the cake batter.
