Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp chili powder
- 1/2 tsp cayenne pepper (optional)
- Powdered sugar, for dusting
Instructions

Preheat the oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the lemon juice, lemon zest, chili powder, and cayenne pepper (if desired).

Gradually mix in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients.

Pour the batter into the greased loaf pan and smooth the top.

Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Dust with powdered sugar before serving.
