Ingredients

  • 1 cup hazelnuts, chopped
  • 1 cup dried mixed fruits (such as raisins, cranberries, and apricots)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a bowl, combine the chopped hazelnuts, dried fruits, flour, brown sugar, baking powder, and salt.

  3. In a separate bowl, beat the eggs and then add melted butter and vanilla extract.

  4. Gradually add the dry ingredients to the wet ingredients and mix well.

  5. Pour the batter into the greased loaf pan and spread it evenly.

  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.

  7. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Serve the hazelnut fruitcake sliced and enjoy!
