Ingredients
- 200g self-raising flour
- 100g dark chocolate, chopped
- 75g dried mixed fruit (currants, raisins, sultanas)
- 50g candied ginger, chopped
- Zest of 1 orange
- 150ml freshly brewed strong tea
- 75g honey
- 1 egg, beaten
Instructions

Preheat the oven to 180°C (350°F).

In a large mixing bowl, combine the flour, dark chocolate, dried fruit, candied ginger, and orange zest.

Pour in the brewed tea and honey, then mix well to combine.

Add in the beaten egg and stir until all the ingredients are fully incorporated.

Transfer the mixture into a greased and lined loaf tin, smoothing the top with a spatula.

Bake in the preheated oven for 1 hour 30 minutes, or until a skewer inserted into the center comes out clean.

Remove from the oven and allow it to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, slice and serve.
