- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup grated carrots
- 1/2 cup crushed pineapple, drained
- 1/4 cup chopped walnuts (optional)
- Cream cheese frosting (store-bought or homemade)
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate large bowl, whisk together oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in grated carrots, crushed pineapple, and chopped walnuts (if using).

Pour the batter into the prepared cake pan and smooth the top with a spatula.
